Reduce Food Waste: Lettuce Soup Recipe

We promise, it tastes nicer than it sounds!


  1. 8 cups of chopped lettuce leaves
  2. 1 cup of chopped onions
  3. 1 chopped garlic clove
  4. 3 tablespoons of unsalted butter
  5. Three quarters of a tablespoon of ground coriander
  6. Quarter of a tablespoon of black pepper
  7. Three quarters of a tablespoon of salt
  8. Three quarters of a cup of diced, peeled potato
  9. 3 cups of water


Cooking Instructions:

  1. Mix the onions and 2 tablespoons of butter into your pot over a moderately low heat until softened.
  2. Add the coriander, salt, and pepper whilst stirring for 1 minute.
  3. Stir in the potato, lettuce and water.
  4. Bring to the boil and then reduce the heat and simmer, covered, for around 10 minutes, until the potato is very tender.
  5. Puree the soup in batches using a blender before transferring to a smaller pan.
  6. Bring the soup to a simmer, and then whisk in the remaining butter, salt and pepper.
  7. Serve and enjoy!
